Paleo BEC


It's only fair for me to show you an example of how I utilized the [paleo] cheese from yesterday's post.

I used it ALL UP IN my Bacon Egg and Cheese -- on a [paleo] BAGEL!

Just take a moment to observe the way that the cheese melts.

Okay and now -- can I please have a moment of silence...

I've mentioned this before, but I love bagels. They are definitely a weakness of mine. NYC is the city of bagels. I spent the first few years that I lived here on the Upper West Side -- across the street from ZABAR'S! And 3 blocks away from Barney Greengrass! And then in Brooklyn where every bagel shop is as delicious as the next. I don't know how I've gone 5 months without attempting paleo bagels, but I am glad that I finally took the leap. I used a recipe from Elana's Pantry and swapped the poppy seeds for sesame seeds (which is just what I had on hand -- excited to get creative with all of the different toppings I can do!).

They were so easy and quick to make and they turned out delicious (invest in a donut/bagel mold immediately!).

Another paleo tip that I'd love to pass along -- Sir Kensington's. This brand is paleo and all of the flavors are unreal. Today, the chipotle mayo added a smokey flavor to my BEC. It was fab to say the least.

Okay, it's brunch time. I suggest you go make this happen ASAP! And guess what, you won't have to feel a pang of guilt. Enjoy, enjoy, enjoy.
