I started my day with a baller [paleo] breakfast -- just how I start all my days.
What better way to start my blog than with a picture of one of my favorite breakfasts to make?
I am a huge believer in breakfast being the most important meal of the day and I always eat breakfast like a QUEEN! I ate this at 9am and will likely not need to eat again for several hours -- plus I will have all the energy in the world for the intense fitness class I have planned for later today.
So what we have here is soft scrambled eggs with a turkey bacon sweet potato hash, strawberries, and a slice of.... wait for it... BREAD?! Yes, bread (Simple Mills Artisan Bread Mix). With butter. And jam (ginger peach to be exact... mmmm).
There's a common misconception that when you are paleo, you have to give up everything that you once thought was delicious. Bread, pasta, bagels, muffins, cheese, pizza, Chinese food, etc. That is only true if you are LAZY! Okay you're not lazy -- I'm just crazy. I've finally found a way of eating, and a way of life, that is completely sustainable for me. But it is definitely time consuming. I use a lot of almond, coconut, tapioca, and arrowroot flours so that I can enjoy the bread, bagels, pizza, brownies and muffins that I miss so much. I also make my own cheese out of nuts! I am in the process of getting my Personal Fitness Chef Certification and Food Handler's license so that I can start my own paleo meal prep business -- and that's where I will come in handy to you. YOU may not have the time due to your busy work schedules and family life, but I certainly do. I am happy to take the time to shop for these ingredients and make all of these delicious paleo substitutes. I am here to help you maintain this healthy lifestyle as well. Here's my recipe for the paleolicious breakfast pictured above.
Single Pan Soft Scrambled Eggs with Turkey Bacon Sweet Potato Hash
Ingredients
2 eggs
1 tbsp coconut milk
2 tsp coconut oil
1 tsp ghee
1 sweet potato (diced)
1/2 medium red onion (diced)
3 slices turkey bacon (I like Applegate -- no fillers or nitrates!)
1 tsp Herbs from Provence with Lavender (I use Morton & Bassett)
Salt and pepper to taste
Preparation
1. Dice up the sweet potatoes, red onion and turkey bacon to match the same size to one another.
2. Add ghee to pan on medium-high heat.
3. Add turkey bacon to pan when hot and stir occasionally for about 5 minutes until crispy (the ghee helps the bacon crisp!).
4. Remove turkey bacon from the pan and set aside.
5. Add 1 tsp coconut oil to pan and add red onions.
6. Stir for 1-2 minutes and then add the sweet potatoes.
7. Season the sweet potatoes with some salt and pepper and the Herbs from Provence with Lavender.
8. Stir occasionally for 10 minutes.
9. In the meantime, crack eggs in a bowl with the coconut milk, salt and pepper and whisk.
10. Add turkey bacon back into the pan with the sweet potatoes and onions and stir for another 3 minutes.
11. Remove hash from pan when ready, and plate.
12. Add 1 tsp coconut oil to pan (now on low heat) and coat pan.
13. Add egg mixture and stir nonstop (preferably with a wooden or silicon spoon) until the eggs are cooked to the consistency of your liking. I like them super soft!
14. Add eggs to plate with your Simple Mills slice of bread and your choice of fruit (berries are great to stick with).
15. ENJOY!
This sweet potato hash is an absolute go-to for me. I love the flavors as well as the health benefits. It's protein rich with healthy fats, and has the right kind of starch source with non-toxic carbs. Plus it's an easy clean up!
Always make extra so that you can save some for the next day!
